recipe.
Parsi Wine Biscuit with Currants
Note: Since this is from a very old Parsi cookbook, the
measures are in Ratal, Navtak and Tolo. 1 Ratal is equal
to 1 lb, Tola is 10 grams.
Baking of these wine biscuits was done in the old days
in a medium "Bhathi" (oven).
1 lb Wheat
Flour ( ½ ratal )
¼ lb Confectioner
powdered sugar
¼ lb Butter
¼ lb Cream
1/4 lb Currants or Raisins
1 Tolo (10 grams)
Caraway seeds - ground lightly
1 Egg
Milk as needed
Method:
Mix flour with all the ingredients using milk as needed
to make stiff dough. Roll out dough to thickness of 1/3
inch. Cut out round circles with a
wine glass
or
cookie cutter. Or make round balls and flatten
with hands into biscuits. Bake at 300 degrees on a
buttered sheet pan till done.
These biscuits are comparable to the British imported
biscuits baked in Parsi Households and Bakeries in
