A sophisticated Parsi answer to the Russian Pavlova
COCONUT, DATE AND WHITE CHOCOLATE MERINGUE
Egg whites: 6
Icing sugar: 250 gm
Ground almonds: 70gm
Chopped dates: 75 gm
White chocolate chips: 70 gm
Desiccated coconut: 70 gm
Preheat oven to 190C.
Beat the eggs whites for 1-2 minutes, gradually adding the sugar a little at a time.
Fold in the rest of the ingredients.
Pipe little 3-inch rounds onto a silicon mat and bake at 190C for 25-30 minutes.
Once ready you can drizzle on some chocolate.
