BLUEBERRY CAKE

sign inWhen Blueberries are in season, make a blueberry cake. Here is a simple recipe that works.

Ingredients

2 cups cake flour
1 and a half cups powdered/confectioners sugar
2 tsp baking powder
1 tsp salt
1 cup butter (softened)
1 cup blueberries
3 eggs

Method
Mix all the ingredients together, and beat a little with a wooden spoon, till well blended and transfer into baking dish. I used a round one.

Bake in the pre-heated oven of 325 degrees for 40-45 minutes or till done (a knife pierced in should come out clean).

  1. This looks really easy! Even though blueberries aren’t in season right now, I bet this would work well with frozen blueberries. Thanks for sharing the post for Fiesta Friday!
