1 chicken (with skin)
100 gm butter
2 chopped onions
200 gm mushrooms
200 ml beer
50 ml gin
salt and pepper to taste
Saute chicken in butter and oil until golden in color. Remove chicken from the pan.
Heat a little oil and saute chopped onions. Add mushrooms and cook until tender.
Pour the gin and beer into the pan. Add the chicken and seasoning and simmer until tender. Transfer the chicken to a serving dish and reduce the sauce.
Add cream and remaining butter. Pour the sauce on top of the chicken.
Garnish with chopped parsley and serve with pasta.
