4 chicken breasts – without skin
2 tsp prepared mustard
2 chopped pineapple rings
4 slices cheese
salt and pepper
2 tbsp seasoned flour
2 beaten eggs
4 tbsp dry breadcrumbs
oil for frying
4 tomatoes – peeled, deseeded and diced
1 diced onion
2 tsp chopped garlic
1 tbsp halved olives
2 tbsp oil
1 tbsp lemon juice
2 tbsp shredded herbs
Slice chicken and spread with mustard.
Arrange over ham, pineapple and cheese. Season.
Fold over top piece of chicken.
Coat each piece with flour, followed by egg and crumbs.
Saute in hot oil for about 7-10 minutes.
Serve with diced tomato accompaniment.
For Tomato accompaniment, combine tomatoes, onion, garlic and olives.
Toss in hot oil for 2 minutes.
Add lemon juice, herbs and seasoning. Serve with chicken
