DOODH PAK with rice (vegetarian recipe)
     
         Rich Milk Pudding
         
         INGREDIENTS:
         Serves 4

         1 Litre milk
         1/2 cup rice
         125 grms sugar
         1/2 tsp vanilla essence
         25 grms almonds, blanch and chop
         25 grms pistachios, blanch and chop
         1 tin evaporated milk, optional
         1 tsp cardamom and nutmeg powder
       
         
         Boil the milk and sugar till creamy consistency.
         
         Crush the rice then fold together. Mix this into the
         hot milk and on a low fire keep stirring gently till the
         doodh pak comes to the boil. Add in the cardamom and
         nutmeg. Add vanilla essence and pour into a dish. Sprinkle with
         chopped almonds and pistachios and refrigerate. 
            Serve with hot puris.
