EGG AND CABBAGE SALAD
EGG AND CABBAGE SALAD

INGREDIENTS :
75 gm grated jaggery
5 tbsp fish sauce

6 tbsp tamarind paste
3 tbsp oil
5 tbsp sliced spring onions
2 tbsp sliced garlic cloves
6 sliced red chillies
6 hard boiled eggs –
shelled and deep fried chopped coriander to garnish Cabbage salad
2 tbsp fish sauce grated rind
1 lime
2 tbsp lime juice
120 ml coconut milk
2 tbsp vegetable oil
2 red chillies
1 tbsp sliced garlic cloves
5 tbsp sliced spring onions
1 shredded cabbage
2 tbsp chopped roasted peanuts

METHOD:
For the cabbage salad, mix together fish sauce, limejuice and rind and coconut milk. Season and pour over salad. Combine jaggery, fish sauce and tamarind in a pan. Simmer for 5 minutes. Heat oil in a pan and saute onions. Add garlic and chillies for both salads until golden brown. Quarter eggs and arrange over cabbage salad. Drizzle on sauce. And scatter with onion mixture. Garnish with coriander and peanuts.
