RICE WITH LENTILS
         Serves 4-5
        
  KHICHRI MASOOR NI
         Spicy Lentil Rice
        
         INGREDIENTS:
        
         10 ozs rice, use a measure cup,
         washed and soaked for 1/2 hr
         1 tbsp masoor dal, red
         1 small onion, sliced
         1 1/2 tsp salt
         1/2 tsp each, chili powder,
         turmeric and curry powder
         1/2 tsp cumin seed
         8-10 peppercorns
         2 small pieces cinnamon
         2 black cardamoms
         1 tbsp coriander, chopped
         2 green chilies, chopped
         1 l/2 Liter water
         1 1/2 tbsp oil
        
         METHOD:
        
        

Fry onions light brown. Add all the above masala till the aroma comes out. Add 1 1/2 liters water or about 1 inch over the level of the rice. When the water comes to a boil add rice and dal. Cover and simmer till rice is done. Khichri should be soft and moist.

Fenugreek:

Tip: Add half teaspoon of fenugreek seeds to your rice.

This This gives a wonderful flavor to the khichri and is healthy to eat to ward off diabetes.
