SPICY MANGO LENTIL RICE
MASALA KERI NI KHICHRI
INGREDIENTS:
Serves 8
1 kg ripe mangoes
or 1 large mango per person
Soak together for at least 1/2 hour:
1/2 kg rice
100 grms mung dal
200 grms masoor dal, red
1/2 kg onions
1 cup oil or ghee
salt
Grind with water the masala:
100 grms dessicated coconut
50 grms large red Goa chillies
1 1/2 tbsp coriander
1 tbsp poppy seeds
1 tbsp cummin seeds
10 cloves garlic
1 tsp turmeric
1 tsp curry powder
1 tsp chilli powder
2 tsp salt
1/4 kg tomatoes
Slice the onions and fry in oil. Add the Ground masala
and fry for 5 minutes. Add 1 1/2 cups water and the
peeled mangoes, keeping them whole, and let this
cook in the masala for about 10 minutes.
Parboil the rice and dals. Drain off the water and add the rice to
the mango masala, allowing it to cook on a slow fire till the rice
is ready. If water is needed add a little, as the Khichri should be
moist.
Tip: Add half teaspoon of fenugreek seeds to your rice.
This This gives a wonderful flavor to the khichri and is healthy to eat
to ward off diabetes.
