KOLMINO PAATIO
         (Shrimp Paatio)
        
         1 lb. shelled and cleaned shrimps
         9 cloves garlic or 1 tsp. garlic powder
         4 dry red hot peppers  grind to a paste
         1 1/2 tsp. turmeric powder  grind to a paste
         3/4 tsp. cumin seeds
         4 onions, chopped-about 2 cups
         1 tbs. finely chopped fresh celentro
         1/3 cup tamarind juice or 1 tsp. Tamarind Concentrate
         1 tbs. grated jaggery or brown sugar
         1 1/2 tsp. salt
         2 tbs. vegetable oil
        
         In a pan heat oil, add onion and saute till golden brown. Add spices paste and cook 5 minutes till well blended. Add shrimps stir till well mixed with onion mixture. Add cilantro, and salt and stir well. Add 1/4 cup water, cover and simmer, allowing shrimp to cook in onion juice about 10 minutes. Add tamarind juice orTamarind Concentrate and jaggery and cook a few minutes longer till
jaggery is melted. Serve as an individual dish, sprinkled with some chopped fresh celentro or as an accompaniment to white rice and Mori Dar.
