KUMMAS Recipe 1
        
         2 cups sugar
         4 eggs, lightly beaten
         5 tbs. shortening
         1 cup Cream of Wheat (or Farina)
         1 cup Wheat flour
         1/4 tsp. each of powdered cardamom, nutmeg and mace
         1 tsp. caraway seeds
         1/2 tsp. baking powder
         2 tbs. slivered almonds
         cup plain yogurt
         1/2 cup milk
        
         Mix thoroughly eggs, shortening and sugar in a 2 quart bowl. Then
         add all dry ingredients to this mixture and blend well. Then add
         yogurt and milk, and smooth the mixture into a 9" x 13" baking dish
         and let stand for 3 hours at room temperature. Then bake in 350- F
         preheated oven for one hour.
        
         Cool slightly before cutting into pieces.  

 

Kumas Recipe 2


This is a traditional Parsi cake eaten with afternoon tea

Ingredients:


1 Cup Semolina (Ravo, Soji, Farina)
1 Cup All Purpose Flour
3/4 Cup Sugar
3 Eggs
3/4 lb Butter
2/3 Cup Yogurt(500grms.)
1 Tsp.Caraway seeds
Cardamon powder
1 Tbls Vanila Ess.
11/2 Tsp Baking powder
2/3 Cup Mixed Peel
Pistachios and Almonds
 
salt to taste

Directions:
Put butter and sugar in a deep pan and briskly stir to lighten
Add eggs one by one and continue stirring till sugar is melted
Add semolina to mixture and blend well
Add all-purpose flour and continue mixing
Add vanilla to mixture
Add Yogurt and mix well
Add baking powder,and dry ingredients to mixture and blend well
Pour mixture in baking pan and bake for approx. 1 hour at 350



It is really great if made with Toddy or fermented coconut water
