MASOOR MA GOSHT

         MASOOR
         (COOKED LENTILS)
        
         1 cup lentils
         1 onion, cut in half
         2 onions, finely sliced
         4 cloves garlic (1/2 tsp.)
         1/2 inch piece of fresh ginger root  grind to
         2 dry red hot peppers   a paste
         1 tsp. cumin seeds
         1 cardamom, shelled
         2 cloves  pound roughly
         3 black peppercorns
         1/2 tsp. Dhansaak masala or Sambhar
         1 tsp. sugar
         1 tsp. salt
         4 tbs. vegetable oil

1 lb Chicken or Lamb cut into small pieces, salted and sautéed in oil
        
Boil lentil in 4 cups water with 1 onion cut in half, and salt. By
the time the lentil is cooked all the water should be absorbed and
the grain should look whole, not mushy. Keep aside. Heat oil and
fry sliced onion in it till golden. Remove half the onion and 2
tbs. oil and keep aside. Add spices to fried onion in pan and cook 5 minutes. Now add the lentil to the masala mixture, mix well, add
sugar and simmer covered, for 10 minutes. Remove to a serving dish and sprinkle reserved fried onion and oil on lentils.

Omit the meat and this dish is great for vegetarians.
