PEACH SALAD

INGREDIENTS :
4 ripe peaches

2 tbsp oil
2 tsp lemon juice
1/2 tsp sugar
1 tsp cream
salt and pepper
Walnut cheese
200 gm firm hung curd
50 gm grated cheese
100 gm chopped walnuts
grated rind of 1 sweet lime
salt and pepper

To coat chopped parsley
coarsely ground pepper
roasted poppy seeds

METHOD:
Remove stones from peaches. Whisk together oil, lemon juice, sugar, cream and seasoning. Spoon over peaches and chill. Combine walnut cheese ingredients.
Shape into balls. Coat with the assorted ingredients. Chill. Arrange peaches on lettuce leaves. Add the walnut cheese balls and serve garnished with croutons.
