To make the tomato patia, you need the following:
6-7 large juicy tomatoes, chopped fine
2 Onions, chopped fine
Parsi dhana jeeru Masala
Parsi Sambhar Masala
Lasan chilli chutney
Green chillies, slit
Salt to taste
Prawns / shrimps (optional)
In a pan, heat the oil, stir fry the onions till they are light brown. Now add the curry leaves, turmeric powder, chilli powder, Parsi Sambhar Masala, Parsi Dhana jeera powder, lasan chilly chutney, cumin and saute till the Masala is cooked nicely and the oil is visible on the sides of it. Add the finely chopped tomatoes, salt, jaggery, green chillies and stir with a little water. Do ensure that the consistency of the patia is thick and not watery.
Let the patia cook for 10 minutes on a slow flame or till the Jaggery has melted completely and the tomatoes are like a puree.
Garnish with coriander leaves.
If you are adding the Prawns or shrimps, do that before garnishing the patia with coriander leaves. Let the fish cook completely. Then garnish with coriander leaves.
