KHARl MURGHI MA SALI
 Chicken in Gravy with Matchstick Potatoes
        
         INGREDIENTS:
          Serves 4
         1 kg chicken, cut into pieces
         2 onions, finely sliced
         1 tsp garlic paste
         1 tsp ginger paste
         1 plece cinnamon stick
         1 tsp salt
         oil
         1/2 kg potatoes, cut finely
        
METHOD:
Heat the oil and fry the sliced onions, light brown. Fry the garlic. ginger and salt slightly, add the chicken pieces and brown both sides, then add cinnamon stick. Add a little more water, cover and put in the oven, 350 degrees for about 1 1/2 hours, or till done.
         Fry the finely sliced potatoes, and before serving, arrange the chicken in a dish and garnish with fried potatoes.

 Editors note: The Sali is very much like the matchstick potatoes found in the Chip section in the Supermarket. You can also make Sali at home with a food grater, grating the potatoes into fine slivers and frying themin hot oil.
