Egg free breakfast – Indian Bhurji with Cottage Cheese

PANEER (COTTAGE CHEESE) BHURJI

(I prepare this almost like our Parsi egg akoori)

INGREDIENTS (please adjust as per your taste)

300 Gms. Finely grated Paneer/Cottage Cheese.
3 medium onions very finely chopped.
1 green chilli very finely chopped.
Finely chopped spring onions with greens & spring garlic with greens.
Ginger-garlic paste 1 tspn.
1/4 tspn haldi/turmeric powder,
1/4 tspn jeera powder,
1/2 tspn dhaniya powder,
1/2 tspn black pepper powder,
Chilli powder as per taste.
2 medium tomatoes finely chopped,
Cilantro/dhaniya/kothmir finely chopped for garnish.
Oil.

METHOD

Heat oil in a pan. Add onion n saute till light brown. Add green chilli, spring onions with greens & spring garlic with greens. Mix n saute for a minute. Add haldi/turmeric powder, black pepper powder, jeera/cumin & dhaniya/corriander powders, chilli powder. Sauté for a minute. Add tomatoes. Saute for a minute. Add panneer/cottage cheese. Mix well. Let it cook for 2-3 minutes. Garnish with cilantro/kothmir.

Serve with either chapattis or toasted bread.
