Delicious Mutton with small onions called “Doongri” in India. In summer (June – July), they are sold in the indian market. In fact there is a town called “Doongri” that I visited with my parents. These photos were sent from Surat, India. Thanks Hoshang Gandhi.
Mangoes, Small whole Onions and Vinegar with Meat make a delicious combination when cooked together.
TIP: In N America – Look for small onions in Whole Foods Market. The doongri taste is different.
Ingredients:
Small Onions (kaandi)Pieces of small mangoesGreen ChilliesBoil the Mutton PiecesTejanu – black large cardmom is better than the small white onesHeat Ghee in PotAdd the TejanuFry for 2 minutes on low heatAdd Cumin SeedsAdd Onions and Green ChilliesFry till light brown from outsideAdd Ginger Garlic pastes, Turmeric, Red Chilli Powder, Coriander Powder (Dhaanna), Cumin powder, and a pinch of Garam Masala.Fry all masalas for 3 – 4 minutesAdd boiled mutton piecesMix and cook with lid on for 15 minutes on low heat. Cook till mango shrinks and softens more. Add Jaggery (gor) and Vinegar (Kolah) for Sweet and Sour taste. Khatta Mitha Taste!Add the Mango pieces and salt
