Truly a labor of love to preserve the unique Parsi (Persian-Indian) culinary heritage
by Roshan Rivetna
This is a “must have” book for Parsi-Zoroastrians, especially those living in the West who wish to pass on their heritage to the next generation. Not only does it give recipes for almost all Parsi dishes (snacks, main dishes, sweet dishes, preserves and more …), some resurrected from classic volumes of past centuries, but also interspersed in the full-color pages, are interesting tid-bits of Parsi history, traditions, customs and ceremonies. It will go a long way to preserve and perpetuate our heritage.
For non-Parsis, “Parsi Cuisine” offers an opportunity to explore this unique cuisine with favorites of Dhansak (Lentils), fish and meats, whilst also getting an interesting glimpse of the Persian-Indian heritage of the Parsis. Rita has taken great pains to explain and translate the ingredients, all of which are now-a-days available in any Indian grocery.

Finding a Parsi Cookbook that has a true treasure trove of great recipes coupled with the authenticity of home cooking is really hard. Rita Jamshed Kapadia has successfully achieved both in this book. Back in December 2016, I happen to luckily attend one of her book tour events and had the joy to first try out some of her (free:)) dishes at the event, immediately bought her book followed by preparing many dishes. Many of the dishes such as Persian Jeweled Rice, Prawn Temperdo, Dar ni Pori, etc. have now become an integral part of our menu. So far the book has been more than sufficient to follow the recopies but the fact that I can reach out to the author for any questions is super comforting. I highly recommend this book to anyone interested in learning about parsi cooking.

Rita sure knows Parsi food well. I’ve always been a huge fan of her website ‘Parsi Cuisine’ and now I have her books as neat collections of recipes per genre. This one is filled with amazing seafood and fish recipes, something Parsis excel at, thanks to the coastal lifestyle. A must have for any seafood fan!

Verified PurchaseJust bought this little E-book a few days ago, when I saw it recommended on a friend’s blog. It brought back nostalgic memories of my childhood in Pune, where my Mom and aunt used to whip up all these wholesome delicacies as the occasion demanded it – be it Sev or Ravo to kickstart someone’s birthday, the Mitthu Dahi (Sweet Curd) during Weddings and Navjotes, the tempting tea-time snacks of Dar ni pori and Bhakras when we returned home hungry from school – they are all here in this little gem of a book and can’t wait to try them all out, one by one. Thank you, Rita, for this wonderful collection of typically Parsee recipes, all gathered in one little book and explained simply and clearly. A great addition to my Kindle collection. .
