Ravo

On this special day, we share traditional sweets with our friends and neighbors. This “Ravo”, enjoyed primarily on auspicious occasions such as Navroze, comes to you with our best wishes for a happy and prosperous year ahead.

Last year, I participated by delivering mason jars full of delicious homemade ravo, layered with toasted almonds and golden raisins, to six neighboring families. Every family member received their own mason jar along with a short description about Navroze and the significance of ravo on this auspicious occasion. My neighbors are already asking me about this year!

Recipe

Ingredients

  • 1 cup Semolina/Sooji (or 5 packets of Cream of Wheat)

  • 1.25 sticks of butter

  • 4.5 cups of 2% milk

  • 6 eggs

  • 1/2 cup sugar

  • 2 tsp vanilla extract

Method

  1. Melt 1 stick of butter and brown the semolina/sooji

  2. In a mixing bowl, add eggs, sugar and milk and whisk together

  3. Once semolina has browned a bit, add the mixture to it

  4. Stir constantly on low fire with a whisk to avoid sticking and lumps, till it thickens to your liking

  5. Then add the 1/4 stick of butter and vanilla extract, and blend into the ravo

  6. For almond slivers and golden raisins, toast them with a touch of canola oil on the stove or in the microwave for a minute to plump the raisins

Enjoy!

Ingredients: Cream of wheat, eggs, sugar, butter, vanilla extract, toasted almonds and raisins. Storage Instructions: Please refrigerate. Warm for about 30 seconds to eat. Can be frozen.
